- 3–4 large Russet potatoes, cut into wedges
- 2 tbsp olive oil
- 2 garlic cloves, minced (or 1 tsp garlic powder)
- 1/3 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley and extra Parmesan for garnish (optional)
Instructions
- Preheat oven to 400°F. Soak potato wedges in cold water for 30 minutes, then drain and pat dry.
- Toss the potato wedges with olive oil, garlic, Parmesan, Italian seasoning, salt, and pepper.
- Spread the wedges in a single layer on a baking sheet.
- Bake for 35-40 minutes, flipping halfway, until golden and crispy.
- Serve hot, garnished with extra Parmesan and parsley if desired.

- Soaking the potatoes helps remove excess starch for crispier wedges.
