Ingredients

  • 34 large Russet potatoes, cut into wedges
  • 2 tbsp olive oil
  • 2 garlic cloves, minced (or 1 tsp garlic powder)
  • 1/3 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley and extra Parmesan for garnish (optional)

Instructions

  • Preheat oven to 400°F. Soak potato wedges in cold water for 30 minutes, then drain and pat dry.
  • Toss the potato wedges with olive oil, garlic, Parmesan, Italian seasoning, salt, and pepper.
  • Spread the wedges in a single layer on a baking sheet.
  • Bake for 35-40 minutes, flipping halfway, until golden and crispy.
