- 2 medium zucchinis (about 1 pound), sliced into 1/4-inch rounds
- 1 cup grated Emmental cheese
- 1/2 cup breadcrumbs
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the sliced zucchinis, olive oil, minced garlic, oregano, salt, black pepper, and red pepper flakes. Toss until the zucchinis are well coated.
- Arrange the zucchini slices in a single layer on a baking sheet lined with parchment paper.
- In a small bowl, mix the breadcrumbs and grated Emmental cheese together. Sprinkle this mixture evenly over the zucchini slices.
- Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is golden brown.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.

- For a creamier texture, add a layer of ricotta cheese under the Emmental cheese mixture.
