  • 1 cup grated Emmental cheese
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the sliced zucchinis, olive oil, minced garlic, oregano, salt, black pepper, and red pepper flakes. Toss until the zucchinis are well coated.
  3. Arrange the zucchini slices in a single layer on a baking sheet lined with parchment paper.
  4. In a small bowl, mix the breadcrumbs and grated Emmental cheese together. Sprinkle this mixture evenly over the zucchini slices.
  5. Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is golden brown.
  6. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
