Ingredients

  • 2 medium zucchinis (about 1 pound), sliced into thin rounds
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine the sliced zucchinis, heavy cream, mozzarella cheese, Parmesan cheese, minced garlic, thyme, salt, black pepper, and red pepper flakes. Mix well until the zucchinis are evenly coated.
  3. Drizzle olive oil in a 9×13-inch baking dish. Layer the zucchini mixture evenly in the dish.
  4. Sprinkle breadcrumbs over the top of the zucchini mixture to create a crunchy topping.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  6. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the zucchinis are tender.
  7. Let it cool for 5 minutes before serving.

Notes

  • For a creamier texture, you can substitute half of the heavy cream with sour cream.
  • Add cooked and crumbled bacon or sausage for a heartier dish.
