- 2 medium zucchinis (about 1 pound), sliced into thin rounds
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon olive oil
- 1/2 cup breadcrumbs
Instructions
- Preheat the oven to 375°F.
- In a large bowl, combine the sliced zucchinis, heavy cream, mozzarella cheese, Parmesan cheese, minced garlic, thyme, salt, black pepper, and red pepper flakes. Mix well until the zucchinis are evenly coated.
- Drizzle olive oil in a 9×13-inch baking dish. Layer the zucchini mixture evenly in the dish.
- Sprinkle breadcrumbs over the top of the zucchini mixture to create a crunchy topping.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the zucchinis are tender.
- Let it cool for 5 minutes before serving.
Notes
- For a creamier texture, you can substitute half of the heavy cream with sour cream.
- Add cooked and crumbled bacon or sausage for a heartier dish.
