Description

Savory Bacon and Egg Muffins that make for a delightful breakfast option.

Ingredients

Scale
  • 8 strips of bacon
  • 6 large eggs
  • 1/2 cup grated cheddar cheese
  • 1/4 cup whole milk
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Chopped fresh chives or parsley for garnish (optional)

Instructions

  1. Begin by preheating your oven to 375°F (190°C).
  2. In a frying pan over medium heat, cook the bacon until it reaches a crispy texture. Once done, transfer the bacon to a plate lined with paper towels to absorb excess grease. Once cooled, chop the bacon into small bits.
  3. Lightly grease a muffin tin with cooking spray or a drizzle of oil.
  4. Cut each bacon strip in half and arrange them around the edges of each muffin cup, forming a cozy cup shape.
  5. In a separate bowl, whisk together the eggs, milk, sea salt, black pepper, garlic powder, and onion powder until the mixture is smooth and well blended.
  6. Sprinkle the chopped bacon and grated cheddar cheese evenly into each bacon-lined muffin cup.
  7. Carefully pour the egg mixture over the bacon and cheese, filling each cup about three-quarters full.
  8. Place the muffin tin in the oven and bake for 18-20 minutes, or until the egg is fully set and the tops are lightly golden.
  9. Once baked, allow the muffins to cool for a few minutes before gently lifting them out of the tin.
  10. If desired, finish with a sprinkle of fresh chives or parsley, and enjoy while warm.

Notes

  • For an extra flavor boost, consider adding diced jalapeños or a dash of red pepper flakes to the egg mixture.
  • You can also swap out the cheddar for your preferred cheese, like feta or pepper jack, to explore new taste sensations.
