- 8 ounces of your favorite pasta (penne or fusilli recommended)
- 1 medium-sized eggplant (approximately 1 pound)
- 2 tablespoons of tahini
- 2 tablespoons of extra virgin olive oil
- 2 tablespoons of freshly squeezed lemon juice
- 2 cloves of garlic, finely minced
- 1 teaspoon of ground cumin
- Salt and freshly cracked black pepper to taste
- 2 tablespoons of fresh parsley, chopped (for garnish)
- A pinch of red pepper flakes (optional, for garnish)
Instructions
- Preheat your oven to 400°F.
- Slice the eggplant in half lengthwise and lay it cut-side down on a parchment-lined baking sheet.
- Roast the eggplant for about 30-35 minutes, or until it becomes tender and the skin is nicely charred.
- Once done, take it out of the oven and allow it to cool down.
- While the eggplant is roasting, bring a large pot of salted water to a boil and cook the pasta according to the package instructions.
- Once cooked, drain the pasta, making sure to reserve about half a cup of the starchy cooking water.
- Once the eggplant has cooled, scoop out the soft flesh and transfer it to a food processor.
- Add the tahini, olive oil, lemon juice, minced garlic, cumin, and a generous pinch of salt and pepper.
- Blend everything together until you achieve a smooth and creamy consistency.
- If the mixture feels too thick, gradually incorporate some of the reserved pasta water until it reaches your preferred texture.
- In a large mixing bowl, combine the warm pasta with the baba ghanoush mixture, tossing gently to ensure every piece of pasta is well-coated.
- If necessary, drizzle in more reserved pasta water to help the sauce cling to the pasta.
- Plate the pasta and finish with a sprinkle of chopped parsley and a dash of red pepper flakes for an extra kick, if desired.
