Description

Baba Ghanoush Pasta is a unique twist on traditional pasta dishes, combining the flavors of roasted eggplant and tahini for a creamy, delicious meal.


Ingredients

  • 8 ounces of your favorite pasta (penne or fusilli recommended)
  • 1 medium-sized eggplant (approximately 1 pound)
  • 2 tablespoons of tahini
  • 2 tablespoons of extra virgin olive oil
  • 2 tablespoons of freshly squeezed lemon juice
  • 2 cloves of garlic, finely minced
  • 1 teaspoon of ground cumin
  • Salt and freshly cracked black pepper to taste
  • 2 tablespoons of fresh parsley, chopped (for garnish)
  • A pinch of red pepper flakes (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F.
  2. Slice the eggplant in half lengthwise and lay it cut-side down on a parchment-lined baking sheet.
  3. Roast the eggplant for about 30-35 minutes, or until it becomes tender and the skin is nicely charred.
  4. Once done, take it out of the oven and allow it to cool down.
  5. While the eggplant is roasting, bring a large pot of salted water to a boil and cook the pasta according to the package instructions.
  6. Once cooked, drain the pasta, making sure to reserve about half a cup of the starchy cooking water.
  7. Once the eggplant has cooled, scoop out the soft flesh and transfer it to a food processor.
  8. Add the tahini, olive oil, lemon juice, minced garlic, cumin, and a generous pinch of salt and pepper.
  9. Blend everything together until you achieve a smooth and creamy consistency.
  10. If the mixture feels too thick, gradually incorporate some of the reserved pasta water until it reaches your preferred texture.
  11. In a large mixing bowl, combine the warm pasta with the baba ghanoush mixture, tossing gently to ensure every piece of pasta is well-coated.
  12. If necessary, drizzle in more reserved pasta water to help the sauce cling to the pasta.
  13. Plate the pasta and finish with a sprinkle of chopped parsley and a dash of red pepper flakes for an extra kick, if desired.
