A delightful twist on traditional cheesecake, this Avocado Lime Cheesecake combines creamy avocados with zesty lime for a refreshing dessert.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons sugar
- 2 ripe avocados, peeled and pitted
- 1 cup cream cheese, softened
- 1 cup sweetened condensed milk
- ½ cup fresh lime juice
- 1 tablespoon lime zest
- 1 teaspoon vanilla extract
- ½ teaspoon salt
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan with cooking spray or butter.
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a blender or food processor, combine the avocados, cream cheese, sweetened condensed milk, lime juice, lime zest, vanilla extract, and salt. Blend until smooth and creamy, scraping down the sides as needed.
- Pour the avocado mixture over the cooled crust and smooth the top with a spatula. Bake for 25-30 minutes, or until the center is set but still slightly jiggly.
- Remove from the oven and let cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight to fully set.
- Before serving, garnish with additional lime zest or whipped cream if desired.
Notes
- For a chocolate twist, add ¼ cup of cocoa powder to the avocado mixture.
- Try using a nut crust instead of a graham cracker crust for a gluten-free option.
