  • 2 ripe avocados
  • 8 ounces lump crab meat, drained
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Cut the avocados in half lengthwise and remove the pit. Scoop out a small amount of flesh from each half to create a larger cavity for the filling. Set aside the scooped avocado for another use or mash it and mix it into the filling.
  2. In a medium bowl, combine the lump crab meat, mayonnaise, Dijon mustard, lemon juice, garlic powder, paprika, salt, and pepper. Gently fold the ingredients together until well mixed, being careful not to break up the crab meat too much.
  3. Spoon the crab mixture evenly into each avocado half, filling them generously.
  4. Garnish with chopped fresh parsley and serve immediately with lemon wedges on the side.
