A creamy and delicious Avocado & Cocoa Chia Pudding that is both nutritious and satisfying.


Ingredients

  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 2 cups almond milk (or any milk of choice)
  • 1/2 cup chia seeds
  • Pinch of salt

Instructions

  1. In a blender, combine the ripe avocado, cocoa powder, maple syrup, vanilla extract, almond milk, and a pinch of salt. Blend until smooth and creamy.
  2. In a large mixing bowl, combine the chia seeds with the blended avocado mixture. Stir well to ensure the chia seeds are evenly distributed.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken the pudding.
  4. Once thickened, stir the pudding again before serving. If it’s too thick, you can add a little more almond milk to reach your desired consistency.
  5. Serve chilled, topped with fresh berries, sliced bananas, or a sprinkle of nuts if desired.
