- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 4 large eggs
- 1 teaspoon vanilla extract
For the glaze:
- 1/2 cup unsalted butter
- 1/2 cup powdered sugar
- 1/4 teaspoon sea salt
- 1–2 tablespoons milk (as needed)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing and dusting it with flour.
- In a mixing bowl, combine the flour, baking soda, baking powder, spices, and salt, whisking them together until evenly blended.
- In a separate bowl, mix the granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract until the mixture is smooth and creamy.
- Carefully fold the dry ingredients into the wet mixture, stirring gently until just combined to avoid overmixing.
- Transfer the batter into the prepared loaf pan, smoothing the top with a spatula. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- While the loaf bakes, make the glaze. Melt the butter in a small saucepan over medium heat, stirring frequently until it turns a rich golden brown and releases a nutty fragrance, about 5-7 minutes. Remove from heat and allow it to cool slightly.
- In a bowl, whisk the browned butter with powdered sugar, sea salt, and enough milk to achieve your preferred glaze thickness.
- After the bread has finished baking, let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once cooled, drizzle the nutty glaze over the top of the pumpkin loaf.

- For an added crunch, consider mixing in 1/2 cup of chopped walnuts or pecans into the batter.
- For a bolder flavor, increase the ground ginger to 1 teaspoon.
