Ingredients

  • 1/2 cup packed brown sugar
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract

For the glaze:

  • 1/2 cup unsalted butter
  • 1/2 cup powdered sugar
  • 1/4 teaspoon sea salt
  • 12 tablespoons milk (as needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing and dusting it with flour.
  2. In a mixing bowl, combine the flour, baking soda, baking powder, spices, and salt, whisking them together until evenly blended.
  3. In a separate bowl, mix the granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract until the mixture is smooth and creamy.
  4. Carefully fold the dry ingredients into the wet mixture, stirring gently until just combined to avoid overmixing.
  5. Transfer the batter into the prepared loaf pan, smoothing the top with a spatula. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  6. While the loaf bakes, make the glaze. Melt the butter in a small saucepan over medium heat, stirring frequently until it turns a rich golden brown and releases a nutty fragrance, about 5-7 minutes. Remove from heat and allow it to cool slightly.
  7. In a bowl, whisk the browned butter with powdered sugar, sea salt, and enough milk to achieve your preferred glaze thickness.
  8. After the bread has finished baking, let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once cooled, drizzle the nutty glaze over the top of the pumpkin loaf.
