- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 4 large egg yolks
- 1/2 cup unsalted butter, melted
- 1 package (16 oz) phyllo dough, thawed
- 1/2 cup powdered sugar (for dusting)
- 1 teaspoon ground cinnamon (optional)
Instructions
- In a saucepan set over medium heat, combine the whole milk, granulated sugar, cornstarch, and salt. Stir the mixture continuously until it thickens and starts to bubble, which should take around 5-7 minutes.
- In a separate bowl, whisk the egg yolks with the vanilla extract. Gradually introduce a small amount of the hot milk mixture to the egg yolks while whisking to prevent curdling. Once tempered, pour the egg mixture back into the saucepan and whisk for an additional 2-3 minutes until the custard is thick and smooth. Remove from heat and allow it to cool slightly.
- Preheat your oven to 375°F (190°C).
- On a flat surface, take one sheet of phyllo dough and brush it lightly with melted butter. Layer another sheet on top and brush again with butter. Repeat this layering process until you have five sheets stacked.
- Place a spoonful of the custard filling along one edge of the phyllo, ensuring you leave space at the ends. Carefully roll the phyllo over the filling to form a log, tucking in the ends to seal the custard inside. Position the rolled phyllo seam-side down on a greased baking tray. Continue this process with the remaining phyllo and custard.
- Brush the tops of the rolls with any leftover melted butter. Bake in the preheated oven for 25-30 minutes, or until they turn a beautiful golden brown and are crispy.
- Once out of the oven, let the rolls cool for a few minutes. Before serving, generously dust them with powdered sugar and a sprinkle of ground cinnamon if desired.
