Description
A delicious and easy recipe for Artichoke and Parmesan Croquettes that are crispy on the outside and flavorful on the inside.
Ingredients
Scale
- 1 can (14 ounces) artichoke hearts, drained and chopped
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs, plus extra for coating
- 2 large eggs
- 1/4 cup chopped fresh parsley
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Vegetable oil for frying
Instructions
- In a large bowl, combine the chopped artichoke hearts, Parmesan cheese, 1 cup of breadcrumbs, eggs, parsley, garlic powder, onion powder, salt, black pepper, and red pepper flakes. Mix until well combined.
- Using your hands, form the mixture into small balls or patties, about 1 inch in diameter. Roll each croquette in additional breadcrumbs to coat.
- In a large skillet, heat about 1 inch of vegetable oil over medium heat. Once the oil is hot, carefully add the croquettes in batches, making sure not to overcrowd the pan.
- Fry for about 3-4 minutes on each side or until golden brown and crispy.
- Remove the croquettes from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Serve warm with your favorite dipping sauce.
Notes
- For a healthier option, bake the croquettes at 400°F for 20-25 minutes, flipping halfway through, until golden and crispy.
- Add a teaspoon of lemon zest to the mixture for a fresh, zesty flavor.
