  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon olive oil
  • ¾ cup warm water
  • 1 pound ground lamb
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ cup fresh cilantro, chopped
  • 1 tablespoon lime juice

Instructions

  1. In a mixing bowl, whisk together the flour, salt, and baking powder until well combined. Gradually incorporate the olive oil and warm water, mixing until a cohesive dough forms. Transfer the dough to a floured surface and knead for about 5 minutes until it becomes elastic. Cover it with a damp cloth and allow it to rest for 30 minutes.
  2. Heat a skillet over medium heat and add the ground lamb. Cook until browned, using a wooden spoon to break it apart. If there’s excess fat, drain it off.
  3. Stir in the diced onion and minced garlic, cooking until the onion softens and becomes translucent, about 5 minutes. Add the ground coriander, smoked paprika, black pepper, and salt, stirring for an additional 2 minutes. Remove from heat and fold in the chopped cilantro and lime juice. Allow the mixture to cool slightly.
  4. Preheat your oven to 400°F (200°C).
  5. After the dough has rested, divide it into 4 equal portions. Roll each portion into a thin disc, approximately 8 inches in diameter.
  6. Spoon a generous amount of the lamb filling onto the center of each disc, ensuring to leave a border around the edges. Fold the sides over the filling to create a boat-like shape, pinching the edges to seal securely.
  7. Arrange the stuffed flatbreads on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the flatbreads are golden and crisp.
  8. Once baked, remove from the oven and let them cool for a few minutes before serving.

  • For an extra kick, consider adding a teaspoon of chili powder to the filling.
