- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 tablespoon olive oil
- ¾ cup warm water
- 1 pound ground lamb
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- ½ teaspoon black pepper
- ½ teaspoon salt
- ¼ cup fresh cilantro, chopped
- 1 tablespoon lime juice
Instructions
- In a mixing bowl, whisk together the flour, salt, and baking powder until well combined. Gradually incorporate the olive oil and warm water, mixing until a cohesive dough forms. Transfer the dough to a floured surface and knead for about 5 minutes until it becomes elastic. Cover it with a damp cloth and allow it to rest for 30 minutes.
- Heat a skillet over medium heat and add the ground lamb. Cook until browned, using a wooden spoon to break it apart. If there’s excess fat, drain it off.
- Stir in the diced onion and minced garlic, cooking until the onion softens and becomes translucent, about 5 minutes. Add the ground coriander, smoked paprika, black pepper, and salt, stirring for an additional 2 minutes. Remove from heat and fold in the chopped cilantro and lime juice. Allow the mixture to cool slightly.
- Preheat your oven to 400°F (200°C).
- After the dough has rested, divide it into 4 equal portions. Roll each portion into a thin disc, approximately 8 inches in diameter.
- Spoon a generous amount of the lamb filling onto the center of each disc, ensuring to leave a border around the edges. Fold the sides over the filling to create a boat-like shape, pinching the edges to seal securely.
- Arrange the stuffed flatbreads on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the flatbreads are golden and crisp.
- Once baked, remove from the oven and let them cool for a few minutes before serving.

- For an extra kick, consider adding a teaspoon of chili powder to the filling.
- For a vegetarian twist, swap the lamb for a mix of sautéed mushrooms and spinach.
