- Sprinkle in the cumin, smoked paprika, sea salt, and black pepper, stirring well to combine.
- Fold in the sliced olives and diced hard-boiled eggs, then remove the skillet from heat and allow the mixture to cool slightly.
- On a floured surface, roll out one of the pie crusts and use a 4-inch round cutter to create circles.
- Spoon approximately 1 tablespoon of the beef mixture into the center of each circle.
- Gently fold the dough over to form a half-moon shape, pressing the edges firmly to seal.
- Use a fork to crimp the edges for a decorative flair.
- Arrange the empanadas on a baking sheet lined with parchment paper.
- Brush the tops with the beaten egg for a golden color when baked.
- Bake in the oven for 20-25 minutes, or until golden brown and flaky.
