Instructions

  1. In a medium bowl, combine the diced apples with lemon juice, ground cinnamon, and brown sugar.
  2. In a skillet over medium heat, melt the butter and add the apple mixture. Sauté for about 5-7 minutes, stirring occasionally, until the apples soften. Remove from heat and allow to cool.
  3. In another bowl, whip the softened cream cheese with confectioners’ sugar and vanilla extract until creamy and smooth.
  4. Carefully fold in the whipped cream until the mixture is well blended.
  5. In a small dish, mix the granulated sugar and ground cinnamon together.
  6. Warm the flour tortillas in a skillet over medium heat for about 30 seconds on each side until they become soft and flexible.
  7. To create the tacos, spread a generous layer of the cheesecake filling onto each tortilla, followed by a spoonful of the sautéed apple mixture.
  8. Fold the tortillas in half to form a taco shape.
  9. Coat each taco in the cinnamon-sugar mixture, ensuring they are evenly covered.
  10. Serve immediately, with a drizzle of caramel sauce on top if desired.
