- 1 (12-14 pound) whole turkey, thawed
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1 cup diced onion
- 2 cups diced apples (such as Granny Smith or Honeycrisp)
- 2 cups cubed bread (preferably day-old, white or whole wheat)
- 1/2 cup chopped celery
- 1/2 cup dried cranberries (optional)
- 1/2 cup chicken broth
- 1/4 cup chopped fresh parsley
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 325°F (165°C). Remove the turkey giblets and pat the turkey dry with paper towels.
- In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, onion powder, thyme, and sage. Rub this mixture all over the turkey, including under the skin where possible.
- In a large skillet over medium heat, add the diced onion and celery. Sauté for about 5 minutes until softened.
- Add the diced apples and cook for an additional 3-4 minutes until they begin to soften. Remove from heat.
- In a large bowl, combine the sautéed mixture with the cubed bread, dried cranberries (if using), chicken broth, parsley, and lemon juice. Mix well to combine.
- Stuff the turkey cavity with the apple and onion mixture, packing it loosely. Tie the legs together with kitchen twine and tuck the wing tips under the body.
- Place the turkey breast-side up on a roasting rack in a large roasting pan. Roast in the preheated oven for about 3 to 3.5 hours, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
- Baste the turkey with pan juices every 30 minutes for a golden skin. If the skin browns too quickly, cover it loosely with aluminum foil.
- Once cooked, remove the turkey from the oven and let it rest for at least 20-30 minutes before carving.
Notes
- For a richer flavor, add chopped walnuts or pecans to the stuffing mixture.
- Substitute the apples with pears or peaches for a different fruity twist.
