A delicious and flavorful roast turkey stuffed with a savory mixture of apples and onions, perfect for holiday gatherings.


Ingredients

  • 1 (12-14 pound) whole turkey, thawed
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1 cup diced onion
  • 2 cups diced apples (such as Granny Smith or Honeycrisp)
  • 2 cups cubed bread (preferably day-old, white or whole wheat)
  • 1/2 cup chopped celery
  • 1/2 cup dried cranberries (optional)
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 325°F (165°C). Remove the turkey giblets and pat the turkey dry with paper towels.
  2. In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, onion powder, thyme, and sage. Rub this mixture all over the turkey, including under the skin where possible.
  3. In a large skillet over medium heat, add the diced onion and celery. Sauté for about 5 minutes until softened.
  4. Add the diced apples and cook for an additional 3-4 minutes until they begin to soften. Remove from heat.
  5. In a large bowl, combine the sautéed mixture with the cubed bread, dried cranberries (if using), chicken broth, parsley, and lemon juice. Mix well to combine.
  6. Stuff the turkey cavity with the apple and onion mixture, packing it loosely. Tie the legs together with kitchen twine and tuck the wing tips under the body.
  7. Place the turkey breast-side up on a roasting rack in a large roasting pan. Roast in the preheated oven for about 3 to 3.5 hours, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
  8. Baste the turkey with pan juices every 30 minutes for a golden skin. If the skin browns too quickly, cover it loosely with aluminum foil.
  9. Once cooked, remove the turkey from the oven and let it rest for at least 20-30 minutes before carving.

Notes

  • For a richer flavor, add chopped walnuts or pecans to the stuffing mixture.
  • Substitute the apples with pears or peaches for a different fruity twist.
