A delicious and creamy Apple Cinnamon Cheesecake that combines the flavors of apples and cinnamon for a delightful dessert.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 teaspoon ground cinnamon
- 2 cups peeled and diced apples (about 2 medium apples)
- 1 tablespoon lemon juice
- ½ cup sour cream
Instructions
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add 1 cup of sugar and continue to beat until well combined.
- Add the vanilla extract, eggs (one at a time), and ground cinnamon to the cream cheese mixture. Beat until smooth and well incorporated.
- In a separate bowl, toss the diced apples with lemon juice to prevent browning. Fold the apples into the cheesecake batter gently.
- Pour the cheesecake batter over the prepared crust in the springform pan. Smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are lightly golden. The center may still have a slight jiggle.
- Remove the cheesecake from the oven and let it cool at room temperature for about 1 hour. Then, refrigerate for at least 4 hours or overnight to set completely.
- Before serving, spread sour cream over the top of the cheesecake for added creaminess and flavor.
Notes
- For a caramel twist, drizzle caramel sauce over the top before serving.
- Substitute the apples with pears or a mix of both for a different flavor profile.
