Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 teaspoon ground cinnamon
  • 2 cups peeled and diced apples (about 2 medium apples)
  • 1 tablespoon lemon juice
  • ½ cup sour cream

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add 1 cup of sugar and continue to beat until well combined.
  4. Add the vanilla extract, eggs (one at a time), and ground cinnamon to the cream cheese mixture. Beat until smooth and well incorporated.
  5. In a separate bowl, toss the diced apples with lemon juice to prevent browning. Fold the apples into the cheesecake batter gently.
  6. Pour the cheesecake batter over the prepared crust in the springform pan. Smooth the top with a spatula.
  7. Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are lightly golden. The center may still have a slight jiggle.
  8. Remove the cheesecake from the oven and let it cool at room temperature for about 1 hour. Then, refrigerate for at least 4 hours or overnight to set completely.
  9. Before serving, spread sour cream over the top of the cheesecake for added creaminess and flavor.

Notes

  • For a caramel twist, drizzle caramel sauce over the top before serving.
  • Substitute the apples with pears or a mix of both for a different flavor profile.
