Ingredients

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken or vegetable broth
- 1 cup potatoes, diced
- 1 cup corn (fresh or frozen)
- 1 cup green beans (fresh or frozen)
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 1 cup cooked chicken, shredded (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, carrots, and celery. Sauté until the vegetables are tender.
- Stir in the minced garlic and cook for an additional minute.
- Pour in the chicken or vegetable broth and bring to a boil.
- Add the diced potatoes, corn, green beans, thyme, and parsley. Season with salt and pepper.
- Reduce heat and let the soup simmer for about 20-25 minutes, or until the vegetables are cooked through.
- If using, add the shredded chicken and heat through before serving.
Notes
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- For a vegetarian version, omit the chicken and use vegetable broth.
- Feel free to add other vegetables you have on hand.
