- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a mixing bowl, blend together the shredded coconut, almond butter, vanilla extract, and a pinch of sea salt until evenly mixed.
- Carefully open each pitted date and fill it with about a tablespoon of the coconut-almond blend.
- Insert a whole almond into the center of each filled date for extra crunch.
- Arrange the stuffed dates on the lined baking sheet.
- In a separate bowl, melt the dark chocolate chips in the microwave, stirring every 30 seconds until smooth and glossy.
- Drizzle the melted chocolate generously over the stuffed dates using a spoon.
