- 1 cup all-purpose flour
- 1/2 cup almond flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/2 cup sliced almonds (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Beat in the egg, vanilla extract, and almond extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Using a tablespoon, scoop out dough and roll into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Gently press a few sliced almonds on top of each cookie.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a chewier texture, refrigerate the dough for 30 minutes before baking.
- You can substitute half of the all-purpose flour with whole wheat flour for a nuttier flavor.
- For a chocolate twist, add 1/2 cup of mini chocolate chips to the dough.
