  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 cup sliced almonds (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Beat in the egg, vanilla extract, and almond extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Using a tablespoon, scoop out dough and roll into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Gently press a few sliced almonds on top of each cookie.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chewier texture, refrigerate the dough for 30 minutes before baking.
  • You can substitute half of the all-purpose flour with whole wheat flour for a nuttier flavor.
  • For a chocolate twist, add 1/2 cup of mini chocolate chips to the dough.
