Delicious and flavorful Al Pastor–Style Chicken Skewers, perfect for grilling.
Ingredients

- 2 lbs chicken thighs, boneless and skinless
- 1/4 cup pineapple juice
- 2 tablespoons adobo sauce
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Pineapple chunks for grilling
- Fresh cilantro for garnish
Instructions
- In a large bowl, combine pineapple juice, adobo sauce, chili powder, cumin, oregano, garlic powder, onion powder, salt, and pepper.
- Add the chicken thighs to the marinade and mix well. Cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken and pineapple chunks onto skewers.
- Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let rest for a few minutes.
- Garnish with fresh cilantro before serving.
Notes
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Serve with tortillas and your favorite toppings for a complete meal.
