Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1/4 cup pineapple juice
  • 2 tablespoons adobo sauce
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Pineapple chunks for grilling
  • Fresh cilantro for garnish

Instructions

  1. In a large bowl, combine pineapple juice, adobo sauce, chili powder, cumin, oregano, garlic powder, onion powder, salt, and pepper.
  2. Add the chicken thighs to the marinade and mix well. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken and pineapple chunks onto skewers.
  5. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Remove from the grill and let rest for a few minutes.
  7. Garnish with fresh cilantro before serving.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
