Crispy and delicious zucchini fritters made effortlessly in an air fryer.
Ingredients

- 2 medium zucchinis, grated
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
Instructions
- Grate the zucchinis and place them in a clean kitchen towel to squeeze out excess moisture.
- In a mixing bowl, combine the grated zucchini, flour, Parmesan cheese, egg, green onions, garlic powder, salt, and pepper.
- Mix until well combined.
- Preheat the air fryer to 375°F (190°C).
- Form the mixture into small patties.
- Spray the air fryer basket with cooking spray and place the patties in a single layer.
- Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and serve warm.
Notes
- For a gluten-free version, substitute all-purpose flour with almond flour.
- Serve with a dipping sauce of your choice.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
