- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1 cup marinara sauce (sugar-free, if desired)
- 1 tablespoon olive oil
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a shallow bowl, combine almond flour, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper. Mix well.
- In another bowl, whisk the eggs until well beaten.
- Dip each piece of chicken into the egg mixture, allowing any excess to drip off, then coat it in the almond flour mixture, pressing gently to adhere.
- Place the coated chicken bites in a single layer in the air fryer basket. Lightly spray or brush them with olive oil for extra crispiness.
- Cook the chicken bites in the air fryer for 10-12 minutes, shaking the basket halfway through, until they are golden brown and cooked through (internal temperature should reach 165°F).
- Serve the chicken bites with marinara sauce on the side for dipping. Garnish with fresh basil leaves if desired.

- For extra flavor, add a teaspoon of dried oregano or crushed red pepper flakes to the almond flour mixture.
- Substitute the almond flour with crushed pork rinds for a different texture and flavor while keeping it keto-friendly.
