Delicious and easy-to-make Air Fryer Eggplant ‘Steaks’ that are perfect for a low-carb keto diet.

- 2 medium eggplants, sliced into 1-inch thick rounds
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.
- Add the eggplant slices to the bowl and toss until they are evenly coated with the oil and spice mixture.
- Place the eggplant slices in a single layer in the air fryer basket. You may need to work in batches depending on the size of your air fryer.
- Air fry the eggplant for 12-15 minutes, flipping halfway through, until they are golden brown and tender.
- In the last 2 minutes of cooking, sprinkle the grated Parmesan cheese on top of the eggplant slices and continue to air fry until the cheese is melted and bubbly.
- Remove from the air fryer and garnish with fresh parsley before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the oil mixture.
- To make it a complete meal, serve the eggplant steaks with a side of marinara sauce for dipping.
