Description

Delicious and easy-to-make Air Fryer Eggplant ‘Steaks’ that are perfect for a low-carb keto diet.


Ingredients

  • 2 medium eggplants, sliced into 1-inch thick rounds
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a large bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.
  3. Add the eggplant slices to the bowl and toss until they are evenly coated with the oil and spice mixture.
  4. Place the eggplant slices in a single layer in the air fryer basket. You may need to work in batches depending on the size of your air fryer.
  5. Air fry the eggplant for 12-15 minutes, flipping halfway through, until they are golden brown and tender.
  6. In the last 2 minutes of cooking, sprinkle the grated Parmesan cheese on top of the eggplant slices and continue to air fry until the cheese is melted and bubbly.
  7. Remove from the air fryer and garnish with fresh parsley before serving.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the oil mixture.
  • To make it a complete meal, serve the eggplant steaks with a side of marinara sauce for dipping.
