A delicious and healthy crustless quiche made with cottage cheese and spinach, perfect for any meal.

- 1 cup cottage cheese
- 4 large eggs
- 1 cup fresh spinach, chopped
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional)
- 1/4 cup diced onion
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9-inch pie dish or quiche pan with cooking spray or olive oil.
- In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the cottage cheese, eggs, milk, garlic powder, onion powder, salt, black pepper, and nutmeg (if using). Whisk until well blended.
- Stir in the sautéed onion and spinach mixture, followed by the shredded cheddar cheese. Mix until evenly distributed.
- Pour the mixture into the prepared pie dish and spread it out evenly.
- Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top.
- Allow to cool for 5-10 minutes before slicing and serving.
Notes
- For added flavor, consider mixing in cooked bacon or ham before baking.
- Substitute the cheddar cheese with feta or mozzarella for a different taste profile.
