Description

A delicious and healthy crustless quiche made with cottage cheese and spinach, perfect for any meal.


Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup fresh spinach, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • 1/4 cup diced onion
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9-inch pie dish or quiche pan with cooking spray or olive oil.
  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine the cottage cheese, eggs, milk, garlic powder, onion powder, salt, black pepper, and nutmeg (if using). Whisk until well blended.
  4. Stir in the sautéed onion and spinach mixture, followed by the shredded cheddar cheese. Mix until evenly distributed.
  5. Pour the mixture into the prepared pie dish and spread it out evenly.
  6. Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top.
  7. Allow to cool for 5-10 minutes before slicing and serving.

  • For added flavor, consider mixing in cooked bacon or ham before baking.
