- 1 lb chicken breast, diced
- 1 cup pineapple chunks
- 1/2 cup soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 1 cup jasmine rice
- 1 can (13.5 oz) coconut milk
- 1/2 cup water
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add diced chicken and cook until browned, about 5-7 minutes.
- Stir in garlic and ginger, cooking for an additional minute.
- Add pineapple chunks and soy sauce, simmer for 5 minutes.
- In a separate pot, combine jasmine rice, coconut milk, water, and a pinch of salt.
- Bring to a boil, then reduce heat and cover, cooking for 15 minutes.
- Serve the pineapple chicken over coconut rice.
Notes
- For a spicier kick, add red pepper flakes to the chicken.
- Feel free to substitute chicken with tofu for a vegetarian option.
