- 1 can (15 oz) chickpeas, rinsed and drained
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon minced fresh ginger
- 1 can (14 oz) coconut milk
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup fresh spinach, roughly chopped
- 1 tablespoon chopped fresh cilantro (for garnish)
- Cooked rice or quinoa, for serving
Instructions
- Warm the olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté until translucent, about 3 minutes.
- Incorporate the minced garlic and ginger, stirring for an additional minute.
- Pour in the chickpeas, coconut milk, curry powder, cumin, sea salt, and black pepper. Mix thoroughly.
- Allow the mixture to come to a gentle simmer, cooking for 5 to 7 minutes.
- Fold in the chopped spinach and cook for another 2 minutes until wilted.
- Serve the chickpea curry over warm rice or quinoa, garnished with fresh cilantro.
Notes
- For a spicy kick, add red pepper flakes or a finely chopped jalapeño during the onion sautéing step.
- Swap spinach for kale or another leafy green for different textures and flavors.
