Ingredients

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon minced fresh ginger
  • 1 can (14 oz) coconut milk
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup fresh spinach, roughly chopped
  • 1 tablespoon chopped fresh cilantro (for garnish)
  • Cooked rice or quinoa, for serving

Instructions

  1. Warm the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3 minutes.
  3. Incorporate the minced garlic and ginger, stirring for an additional minute.
  4. Pour in the chickpeas, coconut milk, curry powder, cumin, sea salt, and black pepper. Mix thoroughly.
  5. Allow the mixture to come to a gentle simmer, cooking for 5 to 7 minutes.
  6. Fold in the chopped spinach and cook for another 2 minutes until wilted.
  7. Serve the chickpea curry over warm rice or quinoa, garnished with fresh cilantro.

Notes

  • For a spicy kick, add red pepper flakes or a finely chopped jalapeño during the onion sautéing step.
